lemon garlic roasted chicken

When life gives you lemons, use those glorious lemons in EVERYTHING you make!


  • Chicken
    • 4 chicken breasts/thighs
    • 3 tbsp. butter
    • 1/3 cup chicken stock
    • 4 tbsp. fresh lemon juice
    • 1 tbsp. honey
    • 2 cloves garlic, minced
    • Handful of parsley, chopped
    • 1 rosemary sprig, minced
    • Salt & pepper to taste
  • Broccolini
    • 8-10 stalks of broccolini
    • 1 lemon, sliced
    • 1/4 cup chicken stock
    • Salt & pepper for taste


  1. Preheat the oven to 400F and line a baking sheet with parchment paper.
  2. Melt the butter in a pan on medium high heat and cook the chicken for 2-3 minutes on either side until browned. Transfer to the baking sheet.
  3. In a bowl, whisk together the chicken stock, lemon juice, honey, garlic, parsley, rosemary, salt and pepper. Pour the sauce over the chicken and bake for 20-30 minutes, or until chicken is cooked through. Occasionally spoon the sauce from the pan over the chicken.
  4. While the chicken is roasting, heat up some oil in a pan on medium high heat and sear the broccolini for 2-3 minutes on each side. Add in the chicken stock, lemon slices, salt and pepper and stir. Cover with a lid and let it cook on medium heat for 5-8 minutes, occasionally flipping the broccolini, until tender but still crunchy, and all the stock has evaporated. Set aside.
  5. When the chicken is done, garnish with more rosemary and lemon slices and serve with the broccolini.
