chicken shawarma

I came across some middle eastern wraps at Trader Joe’s and picked up a packet, hoping to get inspired to make something with them. I did some exploring around my kitchen and realized that I had all the ingredients to whip up some chicken shawarma! It was my first time making chicken shawarma, and I’m so glad I did because it was so yummy and now a weekly craving (I’m making it again today)!

Ingredients

  • Chicken
    • 6 chicken thighs
    • 1 tsp. black pepper
    • 1 tsp. all spice
    • 1 tsp. garlic powder
    • 1 tsp. ground cinnamon
    • 1 tsp. ground nutmeg
    • 1 tsp. ground cardamom
    • 1/2 tsp. chili powder
    • 1/2 tsp. dried oregano
    • 1/2 tsp. salt
    • 1/2 cup greek yogurt
    • 6 wraps
    • Lettuce or any greens
  • Labneh & Salad
    • 1/2 cup greek yogurt
    • 4 tbsp. lemon juice
    • 2 Persian cucumbers, diced
    • 2 large tomatoes, diced
    • Handful of parsley, chopped
    • 1 tbsp. olive oil
    • Salt to taste
  • Potatoes
    • 2 potatoes, sliced into sticks
    • Handful of parsley, chopped
    • 2 tbsp. olive oil
    • Salt & pepper to taste

Method

  1. Combine all the spices for the chicken with the greek yogurt and mix till well combined. Massage this mixture into the chicken and leave to marinate for at least 1 hour.
  2. Preheat the oven to 450F and line two baking sheets with parchment paper.
  3. In a bowl, toss together the potatoes, olive oil, salt and pepper. Lay the potatoes on the prepared baking sheet in a single layer. Bake in the oven for 40 minutes, flipping the potatoes halfway through. Remove and toss it with the parsley.
  4. Transfer the chicken to the other prepared baking sheet and bake in the oven for 30 minutes. When baked through, remove from the oven and leave the chicken to rest for 5 minutes before slicing into thin strips.
  5. While the chicken and potatoes are baking, you can prepare the labneh and salad. In a small bowl, mix together the greek yogurt, 2 tablespoons of lemon juice and some salt to taste; set aside. In another bowl, combine the cucumbers, tomatoes, parsley, remaining lemon juice, olive oil and and salt. Mix till well coated and set aside.
  6. When everything is ready, you can assemble the wraps. Place one wrap  onto a plate, spread on some labneh, top with lettuce or baby greens, then top with the sliced chicken, and finally the salad. Repeat with the rest of the wraps and serve with the potatoes.
