everything noodles

These Asian inspired noodles contain every vegetable I could find in my fridge, and A LOT of chili, which means you are at liberty to throw in whatever you can find!

Ingredients

  • Vegetables
    • 1 carrot, julienned
    • 1 red bell pepper, sliced
    • 4 crimini mushrooms, sliced
    • 1 cup shredded cabbage
    • 1 cup spinach leaves
    • 2 garlic cloves, minced
    • 1″ ginger, minced
    • 1 red Thai chili, minced
    • 5 green beans, halved and blanched
  • Sauce
    • 2 tbsp. soy sauce
    • 1 tbsp. hoisin sauce
    • 1 tsp. sesame oil
    • 1 tbsp. honey
    • 1 tsp. rice vinegar
    • 1 tsp. sherry vinegar
    • 2 tsp. chili paste (any spicy chili paste will do)
    • 1 tsp. corn flour
  • 1 serving of noodles
  • Peanuts, chopped, for garnish

Method

  1. Prepare the noodles according to packet instructions and set aside.
  2. Combine all the ingredients for the sauce in a bowl and set aside.
  3. In a wok or pan, heat up some oil on medium high and add in all the vegetables except for the cabbage and spinach. Once the vegetables have softened, add in the cabbage and spinach and cook till they wilt. Add in the prepared sauce and toss. Add in the noodles and toss for 2-3 minutes till well coated. Transfer to a bowl, garnish with peanuts and serve.
