cajun spiced chicken tacos

These soft tacos are filled with cajun spiced chicken and topped with mango avocado salsa for some sweetness, a cilantro lime sauce because who wants a dry taco?, and some micro greens. Trust me, it’s every thing you’ve ever wanted in a taco!



  • Cajun spiced chicken
    • 2 tbsp. garlic powder
    • 1 tbsp. onion powder
    • 1 tbsp. oregano
    • 1 tbsp. thyme
    • 2 tsp. salt
    • 1 tbsp. black pepper
    • 1 tbsp. cayenne
    • 1 tbsp. paprika
    • 2 tsp. smoked paprika
    • 2 chicken breasts, diced
    • 1/2 red bell pepper, sliced into thin strips
    • 1/4 onion, sliced into half moons
    • 3 mini soft tacos/2 medium soft tacos
  • Mango avocado salsa
    • 3 tbsp. olive oil
    • 1 tbsp. lime juice
    • 1 tbsp. orange juice
    • 1 tbsp. honey
    • 1/4 tsp. salt
    • 1/2 tsp. pepper
    • 1 mango, diced
    • 1/4 cup onion, diced
    • 1 jalapeno, minced
    • 1/2 red bell pepper, diced
    • 1 firm, ripe avocado, diced
    • Handful of cilantro, chopped
  • Cilantro lime sauce
    • 1/2 cup greek yogurt
    • 2 tbsp. lime juice
    • 1/2 cup cilantro
    • 1 garlic clove, roughly diced
    • Salt and pepper to taste


  1. Combine all the spices together for the cajun seasoning and mix well. Add 2 tablespoons of the mixture to the chicken along with a tablespoon of oil and mix till well coated. You can add some more if necessary, and store the rest in an airtight jar. Leave the chicken to marinate for at least 30 minutes.
  2. While the chicken is marinating, place the ingredients for the salsa dressing in a bowl and whisk till well combined. Drizzle about 3 tablespoons onto the salsa mixture and mix gently.
  3. In a food processor, combine all the ingredients for the sauce and blend till smooth. Adjust the seasonings according to taste.
  4. Sauté the sliced bell peppers and onions in some oil on medium low heat till softened. You can add some of the cajun seasoning for extra flavor. Transfer to a bowl and set aside. In the same pan, stir fry the chicken till almost done, then add in the bell peppers and onions and toss for about 3 to 5 minutes till the chicken is done.
  5. Place the tacos onto a plate and top with desired amount of chicken, spoon on some of the mango avocado salsa, drizzle generously with the cilantro lime dressing and garnish with some micro greens or cilantro. Serve immediately.
