paneer bhurji

This, in my opinion, is the quickest and easiest way to transform cottage cheese into a flavorful meal.

Ingredients

  • 1/4 onion, diced
  • 2 garlic cloves, minced
  • 1″ ginger, minced
  • 2 green chilis, minced
  • 1 medium tomato, blended
  • 1 tsp. cumin powder
  • 1 tsp. coriander powder
  • 1/2 tsp. turmeric
  • 1/2 tsp. red chili powder
  • 1/2 tsp. garam masala
  • 1 tsp. salt
  • Handful of cilantro, chopped
  • 500 grams paneer, soaked in hot water for 10 minutes

Method

  1. Heat up some oil in a pan and sauté the onions until translucent. Add in the garlic, ginger and chili and mix for another minute. Add in the tomato, spices and salt and stir till well combined.
  2. Once the paneer has soaked and is soft, crumble it into the tomato mixture and mix till well coated. Cook on medium heat till the water from the tomatoes dries up and the paneer has soaked up the spices. Add in the cilantro, toss and serve with paratha or roti.
