spicy red snapper

This fish is marinated 24 hours with all the chili powders I could find in my spice rack, some salt, parsley, lemon, ginger and garlic. Turned out to be the best fish I’ve ever eaten in my whole damn life!

  • 1 whole red snapper, cleaned
  • 1/2 tsp. paprika
  • 1/2 tsp. cayenne
  • 1/2 tsp. chili powder
  • 1/2 tsp. black pepper
  • 1/2 tsp salt
  • 1 tbsp. lemon juice
  • 1 garlic clove, minced
  • 1″ ginger, minced
  • 1 tbsp. olive oil
  • Handful of parsley, chopped

  1. Make crosswise cuts on the snapper on both sides, mix up all the ingredients and rub on and in the snapper till fully coated. Leave to marinate in the fridge for 8-12 hours.
  2. Pre heat the oven to 420 degrees F and bake the snapper for about 20 minutes, or until flaky. Broil for 3-5 minutes to get a nice char on top. Serve with baked plantains and pepper sauce of choice on the side.
