vanilla chia seed pudding

This superfood has been a staple in Mayan and Aztec diets for centuries. Chia seeds are a good source of omega-3 fatty acids, fiber, antioxidants, iron, and calcium. It’s gluten free, works great as an egg replacer for baked goods, helps regulate blood sugar levels, and the best part is it makes you feel full, reducing food cravings between meals. I always keep a jar of chia seed pudding in my fridge for when I need a quick breakfast.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1 tbsp. honey/maple syrup
  • 1/2 tsp. vanilla extract
  • 1/2 cup mixed berries
  • 2 tbsp. coconut flakes
  • 4 tbsp. granola

Method

  1. Combine the first four ingredients into a bowl and whisk. Let it rest for 5 minutes and whisk again. Transfer into a glass jar or container and refrigerate overnight.
  2. Top with any fruit of your choice, some coconut flakes, granola and a drizzle of honey.
