thai salad with ginger peanut dressing

This salad is everything you’ve ever wanted in a salad, and more! You get the healthy from all those veggies, and the semi unhealthy from the glorious eat with a spoon stuff your face PEANUT dressing! Don’t say I didn’t warn you!

Ingredients

  • 2 cups green cabbage, shredded
  • 2 cups purple cabbage, shredded
  • 2 cups carrots, finely julienned
  • 1 red bell pepper, julienned
  • 1 green bell pepper, julienned
  • 1 green onion, sliced
  • 1/2 cup peanuts, chopped, plus extra
  • Handful of fresh cilantro, chopped, plus extra
  • 1/4 cup peanut butter
  • 3 tbsp. honey
  • 2 cloves garlic, minced
  • 2″ ginger, minced
  • 2 tbsp. soy sauce
  • 2 tbsp. rice vinegar
  • 2 tbsp. lime juice
  • 1 tbsp. oil
  • 2 tsp. sesame oil
  • 1 tbsp. sriracha

Method

  1. Transfer all the ingredients till the cilantro into a big bowl. Combine the rest of the ingredients for the dressing into another bowl and whisk till smooth. Pour over the vegetables and toss, garnish with chopped cilantro and peanuts and serve.
