heirloom tomato salad

I took a trip to the Temescal farmer’s market to buy some fresh strawberries, and ended up buying some heirloom tomatoes and peaches and sweet potatoes and peppers and fresh greens and fish and basically the entire market. Anyways, that inspired me to make a very simple heirloom tomato salad with arugula and goat cheese.

Ingredients

  • Heirloom tomatoes, cut to size
  • Handful of arugula
  • Goat cheese crumbles
  • 2 tbsp. extra-virgin olive oil
  • 3 tbsp. balsamic vinegar
  • 2 tsp. honey
  • Salt & pepper to taste

Method

  1. Layer the salad on a plate starting with the arugula, tomatoes, then goat cheese.
  2. Whisk together the olive oil, balsamic, honey and salt, then drizzle on top of the salad. Sprinkle freshly cracked peppercorns on top of the salad and serve.
